vegetable kurma

I went for a trip to pune and chennai.. And one thing i badly wanted to have was south indian parantha and kurma. This is something i love love and jus love alot. I still remember on the new year first thing i ate was parotta kurma at 3 in the morning in a restaurant in chennai and since then i wanted to make it at home..
So here is the recipe what i tried and trust me guys.. It was soooper delicious...

INGREDIENTS:

  • Coconut                                              about 1cup
  • Khus khus                                           1tsp
  • Cashew                                                5-6
  • Pottu kadalai(roastd chana)             1tbsp
  • Green chillies                                       4 
  • Ginger                                                    a little
  • Elaichi,laung,bay leaf,cinnamon       tempering
  • Jeera                                                      1/2 tsp
  • Onion                                                      2
  • Tomatoes                                              2
  • Cauliflower                                            1 cup
  • Carrot                                                     1 cup
  • Potato                                                    2
  • Green peas                                           1 handful 
  • Salt                                                         to taste
  • Tumeric pwd                                        1/2 tsp
  • Jeera powder                                       1/2 tsp
  • Curry leaves and coriander               for aroma


PROCEDURE:

  1. Chop onion and tomato.
  2. Wash and cut all the vegetables.
  3. Grind coconut,green chillies,khus khus,roasted grams,ginger,cashews.
  4. In a cooker heat oil and add all the tempering ingredients and jeera,curry leaves.
  5. Once they give out good aroma and jeera changes colour add onions and add the turmeric powder.
  6. Once onions are cooked add the tomatoes and let it cook well.it should be well mashed.
  7. Add all the vegetables and pour in the ground coconut mixture.
  8. Add salt and mix well.
  9. Cook for one whistle and then cook in sim for 5-7 minutes.
  10. Once pressure is released open and add jeera powder.
  11. Serve hot with malabar parotta,roti or puri.
