KODO MILLET TAWA PULAV

Coming to our recipe- Tawa Pulav.
It is a very famous Mumbai street food. Many stalls serve it and i have only had it once that too in Delhi. Ever since I bought pav bhaji masala (MTR) I was wishing to make tawa pulav once and one fine day I made it pushing all my laziness away. It was super delicious super hot tawa pulav. But, I tried to give it a healthy makeover by making it with kodo millets instead of regular white rice.
Kodo Millet is a nutritional grain and is a good substitute for rice or wheat. It is an excellent source of fiber and protein.
I personally did not feel much of a difference in taste and Mr.Aishwarya loved it too.

INGREDIENTS:
For masala
- Oil - 1.5 Tbsp
- Jeera - 1 tsp
- Curry leaves - 1 spring
- Peanuts - handful
- Asafoetida/hing - a pinch
- Onion - 1( finely chopped)
- Ginger - 1 inch finely chopped
- Garlic - 2 cloves (finely chopped)
- Tomato - 2 (finely chopped)
- Capsicum - 1 ( finely chopped)
- Carrot - 1 ( finely chopped)
- Peas - 1/4 cup
- Turmeric powder - 1/2 tsp
- Red chilli powder - 1 tsp
- Coriander powder - 1.5 tsp
- Pav bhaji masala - 1 Tbsp+ 1 tsp
- Salt - to taste
To cook kodo millet
- Kodo Millet - 1 cup
- Water - 2 cups
PROCEDURE:
- In a collander wash and drain the kodo maillets and pressure cook it for 2 whistles.
- In a kadhai/wok add oil, jeera and let it splutter.
- Once spluttered add ginger, garlic,curry leaves, peanuts and hing and saute well till peanuts turn light brown and raw smell goes off.
- Add onions and cook till translucent.
- Add tomatoes and all the dry masalas and salt and mix it well.
- Wait for the tomatoes to get mushy and leave oil from sides.
- Once tomato is cooked well add all the veggies and 1/2 cup water to cook the vegetabbles. ( 5 to 7 minutes)
- Once the veggies are cooked add the cooked kodo millet and mix well so that it is evenly mixed and millets are coated.
- Let it cook for another 2 to 3 minutes in low flame.
- Garnish it with cilantro and a squeeze of lemon and serve with your favorite raita.
NOTE:
- You can add any veggie of your choice.
- Adjust the spices according to your taste. If you like it mild reduce the chilli powder quantity.
