HOMEMADE GHEE

Hi everyone :)
      Hope you all are having a great time. Its navaratri, fall, Halloween and what not coming along together to cheer us up with festive mood. In India or for Indians, festivals mean good food, dance, prayers, wishes etc. So i hope this navaratri I can come up with many recipes or other blog posts related to this 9 day festival.
      So to start with i thought of posting up a procedure for home made ghee. I am sure a lot of you already know how to make it, but still couple of my friends through Instagram DM asked me to post a recipe for ghee( i had insta stories on ghee).
     Me and Mr. Aishwarya are huge fans of "athu nai" that is ghee made at home, so i prefer to make it at home instead of buying it from store. Ghee is made with unsalted butter and here i used "Kerry Gold Pure Irish Unsalted Butter" and we liked it. I have also tried Fred Meyer unsalted butter. If at all you use toned/full cream/2%/Whole milk, you can make butter at home itself. Otherwise, get it from any dairy.
     What are we waiting for.Lets get started.

INGREDIENTS:

  • White/ Unsalted butter                        - 500 gms 

PROCEDURE:

  1. Cut the butter so that melting can be even and easy. If your unsalted butter is home made just put it directly.
  2. Let the butter melt over medium heat, stirring occasionally.
  3. At this stage you shall notice a thick foam on the surface of the butter.
  4. Keep stirring occasionally until you see bright yellow color and bubbles start forming and simmer the flame.
  5. Scrape the sides of the pan to remove the milk solids forming on it.
  6. You shall notice the golden color of the butter to turn brown and dark. This stage you can switch off the flame and let the ghee settle down.
  7. Transfer the ghee into a desired container without the brown residue.


NOTE:

  • Quantity of butter should be more than the ghee you want.
  • Do Not throw away the brown residue as they taste well with rice or sugar.
  • You can also add few curry leaves a minute before switching off the flame, adds a very good flavor.
